Spiced Pear Jam 8 c Pear -- about 5 lbs. chopped or coarsely ground peeled
4 c Sugar
1 ts Ground cinnamon
1/4 ts Ground cloves
Combine all ingredients in a large kettle. simmer, uncovered, for 1 1/2 to 2 hours or until thick, stirring occasionally. Stir more frequently as the mixture thickens. Remove from the heat; skim off foam. Pour hot into hot jars, leaving 1/4 in. headspace. Adjust caps. Process for 10 min. in a boiling-water bath. Yield: 6 half pints.
