Jamaican Banana Jam 1 c Orange juice
1/2 c Lime juice
1/2 c Water
2 c Sugar
5 lg Ripe bananas, thinly sliced
Yields enough to fill six 8-ounce jars.
In a large, heavy saucepan combine all ingredients, except bananas, and bring to a boil over medium heat.
Add bananas and lower heat to a simmer, stirring regularly until mixture is thick.
Ladle into hot, sterilized jars and seal immediately according to instructions accompanying your particular type of canning jars.
